This is a simple version of a Thai dish called gluay buat chee, which means ‘bananas that have been ordained as nuns’. We guess it’s because they are clothed in white milk, the same colour as the robes of Thai Buddhist nuns. It’s really delicious, and very simple to make.
HOW TO DO IT
- Peel the bananas and slice them in half lengthways, then chop them into 3 so that each banana gives you 6 pieces.
- Heat the coconut milk with the pandan leaf and, when it comes to the boil, add the banana pieces, sugar and salt. Bring back to the boil and add the coconut cream.
- Gently bring back to a simmer and let the bananas cook for 3-4 minutes. Remove the pandan leaf and serve warm or at room temperature.
TIPS & TRICKS
- You can find pandan leaves or pandan essence in most Asian stores. If you can’t find them, don’t worry. It’s just as good without.
