My Dad Leon isn’t much of a singer. But I do remember him singing ‘you are my sunshine, my only sunshine, you make me happy when skies are grey’.

I can’t recall whether he sang it to my mum, or to me, or whether he in fact sang ‘my only sunshines’ but as the Dad said in the Sound of Music, it was good to have music in the house.

Inspired by Leon’s musical efforts of the 1970s this summer we are all about sunshine and being thankful for what it does for us.

Not just in an infant school ‘harvest festival’ kind of way but also in a ‘we had better stop screwing the planet up’ kind of way too.

It is about the sunshine that makes the plants we serve at LEON taste good and keep us sunny inside, and about the solar energy that powers our restaurants.

Our green powered LEON restaurants will switch this summer to be 100% solar powered.

This new menu, that launches on Summer Solstice, Wednesday 21st June, includes:

South Indian Spiced Fish. Smoked coley from sustainable Scottish shoals in a mild coconut and turmeric sauce with British summer runner beans, served on a bed of brown rice with a lime wedge.  A dairy free recipe from our latest cookbook, Fast & Free.

Coronation-ish Chicken Salad. A salad of shredded British chicken thigh in a creamy spiced tomato dressing with avocado, roasted red peppers, baby plum tomatoes, cucumber, spinach, cos lettuce, and a pot of LEON vinaigrette. Royally good.

The New Falafel Wrap. Our sweet potato falafel and original hummus all wrapped up with the crunch of cos and cucumber, finished with fresh mint and parsley. Easy chick-peasyand vegan friendly.


Halloumi & Avocado Burger. Grilled halloumi and freshly smashed avocado in a brioche bun with chilli sauce and aioli, fresh rocket, and crunchy dill pickles. It’s Smashing.

Avocado Hummus.  Freshly smashed avocado with our original hummus, topped with fresh herbs. ‘Av it.

At breakfast, we will also be introducing our brand new, hot out of the LEON innovation oven, Hash Brown Bites. These are the crispy unused fries of yesterday, smashed up with an egg and baked for today, because we don’t want to waste produce the sun used energy to create.

These will also be included in the new LEON Big Breakfast Box. A breakfast feast of bacon, gluten free sausage, poached egg, sliced avocado, beans, grilled mushrooms, and hash brown bites. Breakfast, fresh out the Box and enough energy to last until lunch.


The new Mango Passionfruit Kefir Smoothie is a tropical tasting shake made with kefir, a brilliant source of good gut-friendly bacteria.

What’s more, some claim Kefir is easier to digest compared to other dairy drinks thanks to the good bacteria which help “predigest” the milk sugars, so when the name kefir comes from the Turkish word ‘keif’, which means ‘good feeling’ it’s almost too good to be true.

We believe a healthy gut helps you have a happy life, so we have started working with Dr Megan Rossi a dietician and nutritionist who has a PhD in gut health.

Our joint mission is to help you look after yourself, from the inside out.

Dr Rossi works as a Research Associate at King’s College London and leads a gut health clinic on Harley street and she is passionate about science-based wellness.
