GrEEN veg And hERB sOUP



2 potatoes
2 leeks or onions
2 spring onions
4 handfuls of spinach
2 courgettes
2 celery sticks
Leftover herbs - eg mint, parsley, basil
2 tblspn oil
1 1/2 pint veg stock

For lunch to use up leftovers

How to make Green veg and herb soup

Heat oil in a large, deep sided pan.
Chop all vegetables. Cook in oil on a low heat until softened.
Add veg stock. Bring to boil then simmer for about an hour.
Blend to make a smooth soup. Serve with croutons.
