Super-Seeded Granola Recipe

Why Super-Seeded Granola?

Ingredients

  • 100ml flavorless oil (such as vegetable or sunflower oil)
  • 60ml maple syrup
  • 225g porridge oats (go for gluten-free if needed)
  • 50g pumpkin seeds (or a combination of pumpkin and sunflower seeds)
  • 2 tablespoons ground flaxseeds/linseeds
  • 150g mixed nuts (walnuts, Brazil nuts, almonds, hazelnuts, and/or pecans), chopped
  • 125g mixed dried fruit (dates, apricots, prunes, and mangoes)

Method

  • Preheat your oven to 160 degrees/325 F/gas mark 3. Lightly grease two baking sheets with oil.
  • In a bowl, whisk together the oil and maple syrup. In another large bowl, combine the oats, seeds, and chopped nuts. Pour half of the maple mixture over the dry ingredients, toss, and then add the remaining half, ensuring everything is well coated.
  • Spread the granola mixture evenly on the baking sheets and bake in the oven for 10 minutes. After 10 minutes, remove the sheets, give the mixture a good stir, and return it to the oven for another 10-20 minutes or until the oats and nuts turn golden. Once done, remove from the oven and allow it to cool.
  • Once completely cool, add the mixed dried fruits to the granola. Store the granola in an airtight container, and it will stay fresh for up to two weeks.
