Vegan Faux-sh and Chips (Banana Blossom recipe)

INGREDIENTS:
- 1 x tin Banana Blossom (we used Plant Pioneers)
- 200ml vegetable oil, we’ve used LEON Picual
Batter:
- 130g GF flour
- 1tsp baking powder
- 1tsp turmeric
- 2 tbsp LEON Burger Sauce
- 1tsp fine sea salt
- 1tbsp lemon juice
- Dill 10g
- 300ml sparkling water, straight from the fridge
Flour Dusting:
- 130g flour
- 1 sheet nori, blitzed or ground in a pestle and mortar
- Salt
- 10g fresh dill, plus extra for garnish
- LEON Waffle fries
- Pea-Lentiful, to serve
METHOD:
- Drain the banana blossoms and carefully remove from your tin, be careful as they’re delicate!
- In separate bowls, combine the ingredients for the flour mixture and whisk together the ingredients for the batter.
- In a pot or wok, heat the frying oil. You’ll want about 2inches of oil to shallow fry, they don’t need to be fully submerged, as you can turn them half-way.
- Coat the banana blossoms in the flour mixture. Then dip them in the batter. Carefully lower them in the oil. Let them fry for about 4-5 minutes until golden brown, flipping them once halfway through.
- Transfer the fried banana blossoms onto a kitchen paper to remove excess oil.
- Serve with LEON Pea-Lentiful dip and sweet potato fries.
- Top with dill and a wedge of lemon.
TIP: If you have a little more time, mix about 50g of LEON Burger sauce with a little water until slightly lose and add your banana blossoms to the mix to marinade for 30minutes before you coat them, it will deliver even more flavour.
