Stop Food Waste Day: LEON x Karma Drinks Recipes
Did you know that 45% of root crops, fruit and vegetables produced globally are lost or wasted each year?
It’s a worrying statistic, but one we can all do something about - easily.
That’s why, for Stop Food Waste Day we’ve teamed up with our mates at Karma Drinks to bring you a selection of recipes that you can whip up at home using popular food you probably have sitting in your kitchen. Each one inspired by one of Karma's Fairtrade, organic fizzy drinks - an ode to consuming food in a way thats good for you and good for the planet.
Ginger-ella Buddha Bowl
Crack open a fiery Gingerella to enjoy with this ginger-based buddha bowl. Good on your tastebuds and great for your gut.
Ingredients:
1 x pack of LEON Spicy Rice
A selection of veggies of your choice (we used red cabbage, avocado, spring onions, broccoli)
For the dressing:
1 tbsp EVOO
1 tbsp rice vinegar
1 large carrot peeled and roughly chopped
2 tbsp roughly chopped ginger
2 tbsp lime juice
1 tbsp agave nectar
1 tsp sesame oil
1 tsp soy sauce
Splash of water
Salt & pepper for seasoning
Method:
- Prep all your veggies and set aside
- To make the dressing, put all the ingredients into a blender and blitz until smooth & creamy
- Heat the LEON Spicy Rice in the microwave and pour into a service bowl.
- Top with your chosen veggies and drizzle over the dressing and it's ready to enjoy!
Lemon-y Garlic Butter Bean Dip
Get lucky with a Lemony Lemonade alongside this zesty butter bean dip. A perfect combination for hosting (or enjoying it all for yourself).
Ingredients:
1 x tin of butter beans, drained & rinsed
1 x garlic clove
Zest of 1 lemon
1 tsp LEON garlic aioli
Splash of water
Salt & pepper to taste
Method:
- Add all ingredients into a blender & blitz until smooth
- Season to taste and drizzle with extra-virgin olive oil and lemon zest
Sierra Leonean Inspired Sweet Potato Peanut Stew
Sierra Leone: the home of Karma cola nuts and the infamous Peanut Soup. Pop open a Karma Cola as the perfect accompaniment to our take on the regional classic.
Ingredients:
1 tbsp EVOO
1 x red onion, finely chopped
2 x garlic cloves, crushed
1 x tin of cannellini beans, drained & rinsed
1 x large sweet potato, peeled and chopped
1 tbsp crunchy peanut butter
3 tbsp tomato paste
1 tsp ground cumin
300ml vegetable stock
1 tsp ground coriander
¼ tsp chilli flakes
Salt & pepper to taste
LEON Spicy Rice
Method:
- Gently heat EVOO in a medium saucepan & add the chopped onion and a pinch of salt.
- Cook for 2-3 minutes and add the garlic, and spices, and cook for a further 1-2 minutes.
- Add the tomato paste, beans, sweet potato, peanut butter, and vegetable stock and simmer for 20 minutes until the sweet potato is soft and cooked through.
- Season to taste & serve with LEON's Spicy Wholegrain Microwave Rice.
