Spicy Leftover Turkey Rice
Spicy Leftover Turkey Rice
Teamed with some big flavours and given a bit of love, you can transform that left over turkey into a show stopping meal that might just rival the big day itself. This spicy rice is something special so we just had to share it.
Ingredients
- 250g leftover turkey, torn into shreds.
- 1 x pack LEON spicy rice
- 100g beansprouts
- 75g spring onions, finely sliced,
- 1 x red chilli, finely sliced (depending on your taste)
- 2 tbsp sesame oil
- 1 tbsp soy sauce
- 1 tsp agave nectar
- 1 tsp rice wine vinegar
- Small handful parsley, torn roughly
Method
Heat 1 tbsp sesame oil in a large frying pan over a medium/heat, and add the turkey. Frying off for several minutes until golden and heated through.
In a small mixing bowl, mix all ingredients for the dressing and set aside.
Add the LEON spicy rice and cook for a further few minutes. Add the dressing and cook for 2-3 minutes until piping hot.
Remove from the heat and add the beansprouts, chilli, spring onions and season to taste.
Sprinkle with parsley & it’s ready to serve.
