Ratatouille
This French classic is healthy, hearty and full of flavour! Even better, it's a one pot wonder, so super simple to put together. We've added LEON Tomato Ketchup for a little sweetness and added richness with that sun-dried tomato base.
Ingredients
- 1 large aubergine, sliced
- 2 courgettes, sliced
- 1 red & yellow pepper, sliced
- 4 large tomatoes, chopped
- 4 tbsp extra virgin olive oil
- 1 medium red onion, peeled and thinly sliced
- 2 garlic cloves, crushed
- 3 tbsp LEON Tomato Ketchup
- 1 tbsp red wine vinegar
- 1 tsp sugar
- Salt & pepper to season
- 1 pack of fresh basil, washed
Method
- Prep the vegetables.
- In a large saucepan, heat the EVOO over a medium heat and add the red onion & aubergine and cook for 7-8 minutes until lightly browned. Add the courgettes and peppers and cook for a further 5-6 minutes until softened.
- Add the tomatoes & LEON tomato ketchup and 1 tsp sugar and stir to combine. Season with salt & pepper and leave to cook down on a medium heat for 8 minutes.
- Stir in the basil and serve.
