Lime, Coriander & Aioli Sweetcorn Ribs
This corn recipe is pretty sweet, if we do say so ourselves.
Ingredients
2 Sweetcorn cobs
2 tbsp LEON Aioli
Coriander
Lime juice
Method
- Preheat the oven to 220C/Fan 200C.
- Take your first cob, place horizontally on your chopping board and using a sharp heavy, sharp knife cut through the cob. Be patient and careful, this bit can be tough!
- Cut each half into three, yielding 6 ‘ribs’ in total from each cob.
- Place your ribs onto a baking tray and slather on your Aioli, making sure each rib is fully covered, use more Aioli for an even crispier bite. Season with salt and pepper.
- Bake for 25-30 minutes.
- Meanwhile, finely chop your coriander.
- Once cooked, dress the ribs with coriander, lime and a drizzle of Aioli.
- Stare at the beauty of your creation, and enjoy.
