Who are L.A Brewery?

L.A Brewery was inspired by founder Louise Avery’s obsession with flavour, fermentation and wild plants. Louise first tasted kombucha in Vermont 10 years ago, and the taste was so compelling – complex, tart & sweet with a deep fizz – that she became obsessed with fermentation as a means of producing unique and complex flavours with ingredients plucked from the land. Original and innovative craft kombucha flavours, inspired by Louise’s own experience of getting back to nature, are sustainably crafted in-house in L.A’s microbrewery in Suffolk.

What is Kombucha?

Kombucha is a naturally sparkling, fermented tea. Traditionally consumed for its benefits to gut health, it is fermented using a small, pancake-like culture called a SCOBY (Symbiotic Culture of Bacteria & Yeast), which is added to sweetened tea. During the fermentation process, the yeast eats the sugar, while the friendly bacteria produce enzymes and acids. The end result is a distinct and complex drink, mildly sweet yet tart with a refreshing lingering fizz.

At L.A Brewery, flavour development starts in the wild. Louise starts with home-brewed batches of kombucha flavoured with hand-picked local seasonal fruits and flowers. These ingredients are then hunted down from the best organic, ethical suppliers: carefully chosen growers, farmers and producers who share L.A’s commitment to quality and sustainability. From better-than-organic tea sourced from high-altitude fields, to rose petals sniffed out for their evocative scent... Louise’s obsession with flavour is at the heart of the brewing process.

L.A x LEON Summer cocktail recipe:

(serves 2)

L.A Brewery Ginger kombucha

4 Strawberries

1/2 lime

2 sprigs of mint

Method:

1. Halve the strawberries and tear the mint into a glass. Muddle or mash with a fork/spoon /whatever you can get your hands on.

2. Top with L.A Ginger kombucha

3. Garnish with a squeeze of 1/4 lime
