GNOCH GNOCH X LEON - Potato Rosti & Fried Eggs with Korean Mayo

Ingredients
- 5 potatoes, grated & strained of water
- Salt & pepper
- 1 heaped tbsp flour
- 1 fried egg each
- Neutral oil for frying
- 1 spring onion each, finely chopped
- LEON's Korean chilli mayo
- Drizzle of chilli oil
Method
- Peel your potatoes and grate them, take a muslin cloth, add your grated potato and squeeze all the moisture/juice out of the potato into a bowl. Pour out the water and add the potato mixture back into your mixing bowl.
- Add some salt, pepper and a sprinkling of flour and mix together.
- Roughly shape the potato mix into patties and heat up some butter on a medium heat in a pan.
- Carefully place the patties into the pan and flip once crispy and brown, let them cook for a few minutes on the other side.
- Fry your egg in a seperate pan.
- Chop up your spring onions and begin assembling your rosti.
- Take your serving plate add a rosti and spread a generous dollop of LEON's Korean Mayo on top and some spring onions, continue layering until you reach your final rosti and add your fried egg.
- Add a sprinkling of salt, pepper and a drizzle of chili oil and enjoy!
