ESTELLE MORALI X LEON - Carrot Cake Pancakes

A delicious breakfast treat with a secret LEON ingredient

Ingredients

  • 140g plain flour
  • 2 tbsp sugar
  • 2 tbsp desiccated coconut
  • 2 tsp baking powder
  • 1 pinch sea salt
  • 220ml oat milk
  • 20g LEON ketchup
  • 2 tbsp melted coconut oil
  • 1 finely grated carrot
  • 1 tsp vanilla extract

Method

  • In a bowl mix your milk, vanilla extract, coconut oil and LEON ketchup.
  • Add in your dry ingredients, flour, sugar, salt, baking powder and  desiccated coconut.
  • Grate your carrot and add to the mixture, stir well.
  • Cook your pancakes in a frying pan on a medium heat.
  • Once firm they're ready to plate.
  • To serve add a dollop of coconut yoghurt, a sprinkling of walnuts and a dash of maple syrup - enjoy!
