ESTELLE MORALI X LEON - Carrot Cake Pancakes
A delicious breakfast treat with a secret LEON ingredient
Ingredients
- 140g plain flour
- 2 tbsp sugar
- 2 tbsp desiccated coconut
- 2 tsp baking powder
- 1 pinch sea salt
- 220ml oat milk
- 20g LEON ketchup
- 2 tbsp melted coconut oil
- 1 finely grated carrot
- 1 tsp vanilla extract
Method
- In a bowl mix your milk, vanilla extract, coconut oil and LEON ketchup.
- Add in your dry ingredients, flour, sugar, salt, baking powder and desiccated coconut.
- Grate your carrot and add to the mixture, stir well.
- Cook your pancakes in a frying pan on a medium heat.
- Once firm they're ready to plate.
- To serve add a dollop of coconut yoghurt, a sprinkling of walnuts and a dash of maple syrup - enjoy!
