LEON x Too Good To Go Pumpkin Bread Recipe

Delicious and nutritious pumpkin comes together with spices to make a moist, autumnal pumpkin bread (or mini muffins). Why waste when you can bake?

INGREDIENTS:

  • 200g pumpkin
  • 80g butter
  • 100g sugar
  • 1 egg
  • 125g plain flour
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp ground ginger 1/2 tsp ground cinnamon 1/2 tsp ground nutmeg

METHOD:

  1. Preheat your oven to 170˚c, and grease and flour a 20 x 10cm loaf tin.
  2. Cut scooped-out pumpkin into similar-sized pieces and steam for 10-15 minutes until soft. Mash pumpkin until smooth and allow to drain in a sieve for 20 - 30 mins.
  3. Cream butter and sugar together until pale. Add egg, and continue to whisk until light and fluffy. Stir in drained, cooled pumpkin.
  4. In a separate bowl, whisk together dry ingredients. Gently combine your wet and dry ingredients until just mixed.
  5. Smooth your batter into your loaf tin and cook for 45 mins or until a skewer comes out clean.
