Coffee Roasted Chicken Wings
INGREDIENTS:
- 500g chicken wings
For the brine
- 250ml coffee brew, cooled
- 250ml water
- 1 bay leaf
- 1 teaspoon pink peppercorns
- 2 tablespoons salt
For the seasoning
- 1 teaspoon salt
- 1 tablespoon Finely ground espresso beans
- 1 teaspoon freshly cracked black pepper
- 2 teaspoons sweet paprika
- 2 teaspoons garlic powder
- ½ teaspoon dried thyme
- ½ teaspoon dried oregano
- ½ teaspoon chipotle powder
- ½ teaspoon groud cumin
- ¼ teaspoon cinnamon
- 2 tablespoons maple syrup
METHOD:
- Place wings in a bowl and add brewed coffee, water, salt, peppercorns and bay leaf. Cover and marinate in the fridge for 6 hours to overnight.
- Mix remaining ingredients, except maple syrup, in a small bowl.
- Preheat oven to 220c
- Drain and rinse wings. Pat dry with paper towel. Toss lightly in spice mixture ensuring wings are evenly coated.
- Arrange wings on baking rack (with lined drip pan underneath) and cook for 15 minutes.
- Baste lightly with maple syrup and then cook an additional 10 minutes.
- Baste a second time lightly with maple syrup and then grill for an additional 3 -5 minutes to caramelise.
