Simple Sauce Solutions
Butter Bean Chilli (ketchup) with Jacket Potato & Guacamole
packed with beans, veg and our very own Chilli Ketchup.
INGREDIENTS:
- 1 x red onion, finely chopped
- 1 tbsp chilli ketchup
- 1 tbsp extra virgin olive oil
- 1 jar of butter beans, drained & rinsed
- 1 red pepper, chopped
- 1 tsp smoked paprika
- 1 x tin of chopped tomatoes
- 1 x large baking potato, cooked
- 1 x avocado, mashed
- Fresh red chilli (optional)
- Juice of 1 lime
- Fresh coriander to garnish
- Salt & pepper to season
METHOD:
- Cook your baked potato in the oven or microwave
- In the meantime, heat the olive oil in a frying pan over a medium heat. Add the red onion & cook for 3-4 minutes until softened.
- Add the red pepper, smoked paprika, butter beans, chilli ketchup and chopped tomatoes and season to taste.
- Leave to simmer for 10-12 minutes.
- In a bowl, add the mashed avocado, red chilli, fresh lime juice & coriander together to make your guacamole. Set aside.
- Serve your jacket potato with the chilli & a good dollop of guacamole.
