Butter Bean Chilli (ketchup) with Jacket Potato & Guacamole

packed with beans, veg and our very own Chilli Ketchup.

INGREDIENTS:

  • 1 x red onion, finely chopped
  • 1 tbsp chilli ketchup
  • 1 tbsp extra virgin olive oil
  • 1 jar of butter beans, drained & rinsed
  • 1 red pepper, chopped
  • 1 tsp smoked paprika
  • 1 x tin of chopped tomatoes
  • 1 x large baking potato, cooked
  • 1 x avocado, mashed
  • Fresh red chilli (optional)
  • Juice of 1 lime
  • Fresh coriander to garnish
  • Salt & pepper to season

METHOD:

  • Cook your baked potato in the oven or microwave
  • In the meantime, heat the olive oil in a frying pan over a medium heat. Add the red onion & cook for 3-4 minutes until softened.
  • Add the red pepper, smoked paprika, butter beans, chilli ketchup and chopped tomatoes and season to taste.
  • Leave to simmer for 10-12 minutes.
  • In a bowl, add the mashed avocado, red chilli, fresh lime juice & coriander together to make your guacamole. Set aside.
  • Serve your jacket potato with the chilli & a good dollop of guacamole.
