Budget Biryani

Want a recipe that packs a punch, saves on the pennies and is ready in minutes? We’ve got just the answer. Our BUDGET BIRYANI. All made in in the microwave in under 6 minutes. Taking our Spicy wholegrain microwave rice, loads of fresh veggies, and some herbs and spices, it really is a meal in minutes.

Ingredients

1 tbsp coconut oil

2 spring onions, finely chopped

½ white onion finely chopped

1 tsp garlic puree

1 tsp ginger puree

1 tsp turmeric powder

¼ tsp cumin powder

¾ tsp ground coriander

1 tbsp tomato paste

½ tsp chilli flakes

½ vegetable stock cube dissolved in 3 tbsp boiling water

1 x pack LEON spicy rice

250g vegetables of your choice (finely chopped) - we used courgette, red pepper, and peas.

Coriander roughly topped to garnish

Salt & pepper to season.

Method

Prep your chosen veggies by chopping them finely and setting aside.

In a large microwaveable bowl, add the coconut oil and microwave on medium heat for 30 seconds until melted.

Add the spices & pastes to the melted coconut oil and stir to combine. Microwave on medium heat for another 30 seconds until the spices are warmed through & bubbling.

Add all the vegetables, vegetable stock & LEON spicy rice and stir to combine. Return the bowl to the microwave and cook for a further 3-5 minutes, depending on how soft you like your veggies.

Remove from the microwave, season to taste, and scatter liberally with fresh coriander & parsley.
