Bettina's Chickpea Omellete with Herby Hummus & Broccolli
Have you got some sad herbs in the fridge that you had the best intentions with? This easy and delish recipe is perfect for brekkie, lunch, dinner or a snack.
Ingredients
For the chickpea Omelette
- 70 g chickpea
- (gram) flour
- 100 ml water
- 1/2 teaspoon salt
- 1/2 tablespoon apple cider vinegar
- Pinch of bicarbonate of soda
- Pinch of Salt
Topping
- Tenderstem Broccoli
- LEON's hummus
- Herbs
Method
- Mix all the omelette ingredients and fry in a medium pan with a glug of olive oil.
- Once bubbling at the top flip and plate.
- Mix LEON's silky smooth hummus with some herbs and add to the omelette along with some flash fried broccoli or any other veg you might have lying around.
