Bettina's Chickpea Omellete with Herby Hummus & Broccolli

Have you got some sad herbs in the fridge that you had the best intentions with? This easy and delish recipe is perfect for brekkie, lunch, dinner or a snack.

Ingredients

For the chickpea Omelette

  • 70 g chickpea
  • (gram) flour
  • 100 ml water
  • 1/2 teaspoon salt
  • 1/2 tablespoon apple cider vinegar
  • Pinch of bicarbonate of soda
  • Pinch of Salt

Topping

  • Tenderstem Broccoli
  • LEON's hummus
  • Herbs 


Method

  1. Mix all the omelette ingredients and fry in a medium pan with a glug of olive oil.
  2. Once bubbling at the top flip and plate.
  3. Mix LEON's silky smooth hummus with some herbs and add to the omelette along with some flash fried broccoli or any other veg you might have lying around.
