This is a simple and delicious vegetarian barbecue recipe. The tender courgettes take on a lovely smoky flavour and are perfectly paired with the kick of chilli and fresh lemon.
If the weather doesn’t hold up (let’s be honest, we can never rely on British weather) they’re just as good cooked on the griddle instead.
Ingredients
6 courgettes
olive oil
red wine vinegar
2 red chillies, deseeded and finely chopped
1 small garlic clove, crushed or finely chopped
salt and pepper
Aioli dip
1 tbsp LEON Garlic Aioli
Juice of 1 lemon
Pinch of lemon zest
Pinch of chilli flakes
Salt to season
Pepper to season
Method
Slice the courgettes lengthways to a thickness of ½ cm.
Brush with a little oil on both sides. Griddle on a BBQ, turning once, until just tender.
Mix 2 tablespoons of oil with 2 tablespoons of red wine vinegar.
Toss in the chilli and garlic and cooked courgettes while they're still warm.
Make the elevated aioli dip by mixing in the lemon juice and top with chilli flakes and lemon zest.
Season to taste.
Serve hot and enjoy.
