Ingredients

6 large parsnips, peeled
2 tablespoons olive oil
salt and freshly ground black pepper

Method

1. Heat the oven to 190°C/375°F/gas mark 5.

2. Cut the parsnips into chips or wedges about 1cm thick. Toss with the olive oil and season. Place on a baking tray lined with baking parchment and cook in the oven for about 20 minutes. Check the parsnips, give the tray a shake, and return to the oven for an extra 10 minutes if they are not quite cooked.

3. Scoop the parsnips off the tray and on to a serving dish. Drizzle with truf e oil and sprinkle with truf e salt and chives to serve.

Tip

We served these with a dollop of (non-vegan) truf e honey, which goes so well with the sweet parsnips.
