1. Preheat the oven to 180°C/350°C/gas mark 4, and put your roasting tray in to get hot too.

2. Put the pumpkin chunks into a bowl with the oil, cumin, allspice, whole garlic cloves, chilli and seasoning. Mix around so that everything gets coated.

3.Get the hot tray out of the oven and tip everything in. Roast for 45 minutes to 1 hour, turning and generally giving it all a good stir. Take special care with the garlic to make sure that it doesn’t burn but just gets nicely caramelized, taking it out early if need be.

4.Meanwhile, in a bowl mix all the hummus ingredients together except the seasoning, then blitz to a purée in a food processor. Tip back into the mixing bowl, stir well and season.

5. Whizz the pumpkin and garlic to a purée and fold into the hummus with some extra seasoning.

6. Finish with the pumpkin seeds on top. Would be nice with a crumbling of feta on there too.
